Think I’d take the boat ride to and from.
While at Disney Springs, you want a meal with some entertainment:

Id go with the light up ears. I've learned that it doesn't matter how conspicuous you might feel wearing ears in one form or another on property, nobody there will give you a second glance!

The bungalows at Poly look really cool!

I think either would be fun, but Country Bear Jamboree would be easier to view the overlay.
Disney hotels are being refurbished. In most cases, this means going for a more minimal look. Highly Disney themed rooms are then sold at a premium.
Bring back the themed rooms or keep going with the minimal look? |

Emphatically, bring back the themed rooms! I never want to forget I'm on property when we are on a trip!

That Haunted Mansion one looks terrific, that'd be my choice!

This is hard - don't remember going to either. I'll go with Camp Minnie Mickey b/c that seems as if it could have been a quieter place outside for kids to run around or just calm down? Maybe?
Addition to nighttime shows that you like better - lasers or castle projections? |

I'm going to say lasers. My wife is a bit vertically challenged, so when we're standing back for the castle show, she can't see the bottom 1/2 to 2/3 of the castle to appreciate the projections on it. Imagine for most kids it's even worse. But everyone can see the fireworks and lasers!
You have Camp Minnie-Mickey pegged! It was only busy back there when Festival of the Lion King would let out, but during the show, there were some great little trails leading back to some "secret" meet nd greets that were never really lined up. And the music playing back there was wonderful, classic Disney movie stuff, only done with acoustic guitar.

Zootopia! They put that big Moana walk through in EPCOT (which puzzles me completely).
